Pizza with Tomato and Mozzarella
This simple pizza is a great way to get dinner on the table and please everyone. We have pizza every Saturday afternoon, and the whole family looks forward to it. I used to try to think of new and creative toppings for our pizzas, but we have settled on tomatoes, mozzarella, and basil—often called a Margherita pizza—as our favorite.

MAKES 2 PIZZAS
PREP TIME: 15 minutes (5 minutes to mix the dough, 5 minutes to fold the dough, and 5 minutes to divide and shape the dough)
INACTIVE TIME: 20 minutes to rest, 1 hour 30 minutes to rise, 30 minutes for the dough to rest and preheat the oven
BAKE TIME: 9 to 18 minutes
TOOLS NEEDED: thermometer, kitchen scale, large bowl, kitchen towel, baking stone or baking sheet, peel or wooden cutting board
FOR THE DOUGH 8 grams instant yeast
375 grams water
500 grams all-purpose flour
10 grams salt
FOR THE PIZZA TOPPING
¼ cup olive oil
1 (16-ounce) can crushed tomatoes
16 ounces fresh mozzarella
Fresh basil
Red pepper flakes
Additional toppings of your choice
